Hey peeps, it has been a busy month of March 2011. Hardly have time to update my blog. In a few days I will try to update as much as possible those new cake design due for update in this blog. Just like to share recently I was approched by Abbott to take up 1k pcs of cupcakes for their launching of their milk grow. The challenged was to use Grow milk powder and Wholemeal flour as healthier choice part of the ingredient. I had to do some R&D.... the third version of my muffin recipe got a thumbs up by my son. These muffins are crispy on the outside and soft inside best eaten while it is still warm.... lots of fibre... So peeps if you want to give it a try...here is the recipe
Wholemeal Muffin
Unsalted Butter 240gm Brown sugar 240gm Eggs 240gm Wholemeal flour 210gm } soak with water water 200 ml } Milk powder ( I use grow) 80gm Plain flour 210gm baking poweder 12gm bicarbonate of soda 4gm
Work process 1. Cream the butter and brown sugar till light and fluffy 2. Add eggs slowly into 3 parts slow speed. 3. Sift plain flour, baking powder, milk powder and baking soda 4. Fold the dry ingredients to the egg mixture 5.Fold the soaked wholemeal flour ( reason for soaking the wholemeal flour is to present from absorbing from other ingredients when baking) 6 Prepare the muffin souffle cup and ready to bake at 170 degree for 15 mins Happy baking!
