Ben 10 Alien Force.....!!


Couldnt recall how many B 10 AF I made but this one really touched my heart cos Raiyan dad, Anthony came all the way from Pasir Ris with his motorbike to collect the cake. I was a little worried cos its fresh cream cake not sure if it could take extra bumpy ride home.

Anyhow..... when it comes to fatherly love... I am sure the cake is in safe hands.

It has been 2 long roller coster week for me as I had to juggle between interest and work. So finally managed to upload some pics for collection of the week.

Cake - Wedding Gift

Wan a nice young lady asked me if I could do an edible image cake for her best friend's wedding. Although it was a short notice I had to figure out what's best given the liberty of designing the cake myself.... I used buttercream and fondant flowers .


So what's good about this image is that its orignality and the high resolution.... thumbs up for the graphic designer.... made it easier for a baker to decorate the cake.

Whenever I pick up a call these day... "Can you do a Ben 10 cake....?" Well this Ben 10 cake weighs 3.5kg all the way delivered to airport T1 cos little Skyler celebrated his 5th birthday. Glad that his mom said he loves the cake and cuppies.
I used vanilla sponge cake layered with fresh cream and the airbrush technique. Use the younger version of Ben 10...... to match Skyler's age.

Ben 10 Alien Force Birthday Cake 1

This week I am really honoured to have the opportunity to bake a birthday cake for Marianne Doele 's daughter. Since it's for a girl, so I decided to add some flowers as borders for the cake.
Noticed the Ben Tennyson is all grown up teenager as shown in the latest Ben 10 Alien Force. I had to join my son to watch an episode of the Ben 10 to really understand the show, we deliberated on the show and designs, so I guess its just not baking but understanding the theme itself.

Ben 10 cake is getting a top in the list these days.....

Cake made of butter cream and fondant..... of coz John Cena's pic.... hope he likes it when he sees his pic on the cake... haha since it was also 25th Anniversary of Wrestlemania on 5 Apr 09.

Actually these days I felt that its getting more and more challenging to design a cake..... For this castle cake, the classic mould was imported from US (cost me a big BOMB!! actually)... I have incorporated the airbrush, sablon, edible image and piping technique. Lucky me got's Rahim colleague Nessie bought the ornaments from Jakarta.

Despite the busy week, managed to fulfilled orders for birthday BEN 10 cake. Mrs Toy called if I could do a birthday cake with the BEN 10 theme for her son's Wilson 7th birthday. Delivered her cake this morning..... and she said "Fantastic!' when she saw the cake..... and I felt all the hard work paid off after hearing her comments.

Tinker Bell Birthday Cakes for Vanessa

Once a upon a time...... well this is no fairy tale.... but one evening Yasmin (Indonesian residing in Spore) asked me if I could do a Tinker Bell theme for her princess Vanessa's birthday. I wasnt very sure initially cos I guess her expectiation would be very high since she comes from.... where Indonesian are great cake decorators. After much discussions...... tried getting the ornaments from US... guess what wanted the shipping tripled the price of goods..... but had to cancel cos it couldnt reach on time for the birthday. I had spent the night getting things done. Had to drive carefully during the delivery day.... to Great World City..... wow so stress the Tinber Bell fell backwards..... slight accident but managed to touch up a little. Yasmin saw the cake said.... "you did a great job!!". That was a relief for me.... and the Izahskitchen could live happily ever after (at least for now).

Crazy About Cupcake Decor Workshop

This week seven students joined my cupcake decor class. Dorothy, Jun, Khafisah, Noraini, Dewi... opps forgot again 2 other student's name... They came all the way from Jurong, Tampines...AMK. We all had a fun time decorating the cuppies and lots of laughter. I am really proud that all of them came with high sprits, very enthusiatic and very talented.... just constant practise and they will be good decorators

Happy Valentine's Day to those who celebrate them!! This week in conjunction with Valentine's Day 4 enthusiast bakers joined me in cake decorating. Dorothy, Susan, Dewi and Nura..... all with different image concept..... but we all had a good time decorating!














Pastry-Apple Strudel (Austrian) & Petite Chicken Patties

Petite - Puff pastry with chicken filling... yum yum


This version Apple Strudel originates from Austria. The dough skin is pulled till translucent..... reminds me of how the "mamaks' spin the roti prata dough in the air.... that how this the dough showed be and filled with apple filling.... rolled with towels just like swiss roll method and there you are.... flaky crispy.... right from the oven.

Strawberry Cake

Well, its been quite a long busy week..... juggling work life balance. This cake specially ordered for farewell gift.... a staff from WS. Asked him to sellect from my collection of cookbooks by Kevin Chai. Did some modifications and "wa lah!"..... topped with fresh cream and strawberry fillings.

The usually tuna puff pastry..... but this one topped with cheddar cheese.

Nice golden brown..... so remember if you have excess pastry dough this is what you can use them for...... Cheese Sticks..... kids love them




Cupcakes - Ben 10 (Airbrush)

This time Mabel ordered another set of cuppies for his son Joel, so this time I decided to do an airbrush.... technique taught by my sifu Tan See Fong. Airbrush technigue actually saves time and excess buttercream after mixing colour. All you need is to prepare the plain cuppies and colour them with airbrush.













Pastry-Pithivier and Canolli

Bon Apetite!!! Bonquor!!
Almond filling Pithivier originates from France...... this pastry recipe uses butter instead of pastry margarine. More healthier..... no trans fat but needs to refrigerate each fold. Five minutes before baking time to sprinkle icing sugar and re bake till the glossy look.



Canolli.... originates from Italy... Sicily. With cream filling custard.... choc chips. The dough is deep fried and later dipped with chocolate on each sides and piped with filling. Taste like ice cream.... another Italian dessert.... Mamamia!!!

Decorating ideas for CNY and Valentine's Day







I figured going to be busy week in Feb 09, planning and preparing for a Valentine Cupcake decorating class for a group of youths.



Cupcakes with extended family inscriptions

Ram wanted cupcakes to celebrate her grandmother's birthday. She requested that all her aunties and uncle's name endorsed on each cupcakes. It sounded easy for me at first but took me quite a while to come out with the appropriate design. In cake decorating 3 important factor applies
1) colour (not more than 3 colour -contrast and harmony)
2) Design is in relation with size and height of cake
3) lettering matches the size of cake

Unlike children's birthday cake, these are for extended family so I come up with bouquet flower theme.... a gift of love to dearest grandma....

These cupcakes inspired by the super hero cartoon character Ben 10. As usual the edible standing image coupled by matching theme colour for Mabel's son Joel 6th birthday. Kids love the chocolate candy.....

Transformers Animated- Standing Image

Just like to share my creation of yet another standing image..... Syakir's favourite cartoon character now... Animated Transformers.... Bumble Bee, Optomus Prime, etc. I am getting use to Fresh Cream now..... got some tips on how to keep cream cream stable even though it's outdoor.

Actually I would like to thank Mbk PRespati who always gives me inspirations... her "karya luarbiasa" that encouraged me to explore more and more. Mbk recently hospitalized and just came out from the ICU, I pray to ALLAH that she will have a speedy recovery.

Savoury Petite Four is the family of Chou Pastry...... since it is savoury lots spices and tomato paste is use. Unless cream puff the filings are usually like tuna and Egg cream fillings.

Strawberry Shortcake


This is her "back to School' cake.... 2009 her first year in Primary One. One of Yasmine's favourite character... strawberry shortcake. She has always love cream cakes, so I made sponge cake layered, strawberry and fresh cream. Some mirror gel to bring some shiny look on the cake.

I kinda find this idea instanteously cos I felt too plain with just ganache as topping. Decide to add on edible image.. to enhance the cake a litte.

Christmas Orders! Orders!

Merry Christmas and a Happy New Year. Especially to my faithful customers, so this is the final orders for Christmas. My last assignment ended at 6pm on the Eve of Christmas, Sue managed to receive her goodies including her pineapple tarts and Dahlia biscuits (hmm feels like Hari Raya) just on time.
All packed and ready to deliver.




This one is special, a customer wanted raisins and chocolate chips... well had to experiment it and turned out good.

Butter Cake (Chiffon Style)


A tip on any butter cake using sugar batter method is not to overmix, so most butter cake uses additional step which is the chiffon style to get that soft chiffon texture cake.

Edible Image Wedding Cupcakes

I am really excited about this week's project. One day at my office pantry my friend Geraldine told me about her friend Marina (the bride). And the next day Marina actually offered me to be the food photographer for my goodies. So I thought perhaps we wait till after her wedding.... then 2 weeks ago Marina asked me if I could do a 3 tier wedding cupcakes with the cartoon edible image of her and the groom.
I asked her what was her theme and she said white and silver. So I had to come with something to show her if she like the standing image of the bride and groom on a cupcake. She gave me the green light and wow I had to find my resources for the decor.

Actually there are a few people I like to thank for supporting me throughout this project especially my dad (for being the runner and ideas and comments of decorating the tiers), hubby (edible image with less supervision able to help complete task), mum (accompanying me doing the swirl.... 300 times.... I think by now if I close my eyes I know where to turn my nozzle...hahah). My friends Noraini (for the wonderful tiers), Siti and Mas for helping me to clear up after the wedding... even though we just finish our class late nite).






I was actually surprise when a baking friend told me that the article about Marina came out in the Sunday Times. Basic Sponge and cake decor

It has been a roller coaster week for me,with final module practical exams on 3 Dec 08.... (ended with a happy note) although I didnt sleep for 48 hrs due to work commitment (month end closing... lucky the essence of chicken helped me thru,,,,,). I must say the other day... someone posted me a question " how I managed my role as a mother, full time job, part time instructor and a student myself?" Well my answer is very simple.... time management and it is not the quantity of time you spent with your love once it is the quality time..... I am glad that my family has been very supportive in career path and my passion for baking.


Anyway to end the week, Hani a cheerfull - full time tutor had a private class in my kitchen. She is always generous with her smile wanted to learn on basic sponge cake, so while waiting the cake to bake.... I had a chance to demo to her how to ice the cake.... and some basic cake decorating.

Nope this is not eclairs.... this is made of biscuits pasrty... sandwich with raspberry jam and dipped into chocolate ganache. My children love them.....

Last 29 November 08, 4 students namely Rozita, Junaidah, Yattie and Rubiah joined my cake decorating class. The class was filled with fun jokes and laughter here and there, mostly it was their first time in cake decorating. Teachniques for piping of rose was introduced.

Cake Module 1 - Chiffon Cake


This week we covered topic on Chiffon Method. Personally the baking sessions has so far been meaningful to me. It has expanded my circle of friends a has not only did we discussed but exchange ideas. One example was while waiting for the chiffon to cool for 2 hrs, I had a chance to sit and talk to Momtaz who was once an early childrenhood teacher. It is really amazing how much knowledge she has on childhood development. I guess I've gained best of both worlds.....

With Rubiah using the Baby belling oven, extended time is required to achieve the actually baking time. Like they all say "get to know you oven".... as the temperature and baking time varies from oen oven to another.

Cake Module 1 - Butter Cake (Marble)

This week's topic Butter cake using Sugar Batter Method. The points to look out for butter cake is during the creaming process. Avoid over mixing and while creaming the fat ensure that scraping on the sides of the mixing bowl is done regularly.

Best is to cut the cake when it is completely cool enabling it absorb enough moisture.

Birthday Cake!!!

Meet Samuel my youngest student so far.... One day Samuel found me from the net and called me to check if we could bake together a birthday cake for his girlfriend. I immediately said Ok and discussed the type of cake he prefered.


One afternoon he dropped by my kitchen and both of us came up with a Chocolate Truffle cos I said that was my speciality and repeat orders. While having conversation with him I discovered that Samuel is an intelligent and mature young man despite his age. We exchange ideas on how to plan time management on studies and gave me good tips on how to do well for Syakir Primary school matematics.

Hmmm... look how dedicated Samuel is in his cake decorating!!! Wish his ambition come true to be a doctor someday. Glad that I met him!!

Book Shape Cake - Yasmine K2 Graduation

Finally, today Yasmine ended her pre-schools days and preparing herself into a new environment of academic. I have long promised her a graduation cake, so work up 3am in the morning (cool weather) and a quite kitchen icing her graduation cake to be shared with her fellow K2 friends at the PCF centre.
The cake is topped with edible image taken on her graduation day with the guest of honour Mr Hawazi Daipi. Did some blue and red borders with Tan See Fong air brush.

Cake Module 1 - Beginners (Lesson 1)

Last weekend 9 Nov 08, was the 1st lesson conducted for Cake Module 1. 7 students (1 on MC) joined me namely, Noraini, Noraidah, Saadiah, Rubiah, Yee, Momtaz & Zubaidah. They came as far as Tampines and Marine Parade. We had 2 sessions ans I must say its quite challenging as an intructor to incorporate teaching teachnique for different level of hands on skill from the participants. Overall the session went smoothly, rectifications was done immediately and some discussion and theory in order to achieve the best results.

Well it has been a long evening, its the finale for the cake workshop presentation. Everyone was happy with their cakes. So the moment of truth day will be 26 Nov and 3 Dec 08. Yes exams is round the corner again.

Happy Birthday Ayah!!!

29 Oct 08, was 'ayah's birthday. So made this lovely Chocolate Truffle to celebrate with. Got a watch for ayah... and he was so happy!!!

Milicent ordered the Chocolate Truffle to surprise her boss on her birthday. She wanted her bosses name to be inscripted. So had to use the piping gel to overwrite on the truffle to make the effect stand out. Happy birthday Linda!!!

Creme Caramel and Creme Brulee

This is creme caramel. Made caramel (sugar & water) boiled till thicken. Fresh cream boiled and added into whisked egg yolk and baked on Bain Marie and later chilled. Great for hot humid day dessert.

Progress Practical Test 3- Bavarian Cream cake

Yet another nerve wracking day... exams ended with high note. We did the Bavarian cream cake. Cake decorated with finger sponge and top with peach and cherries. Brought it to office and all thumbs up..... guess I passed their taste buds.

Tiny Fruit yellow Bean






Well check it out, this is another type of tiny fruit ornaments made from the yellow beans popular dessert from Thailand called look choop. Spent the Hari Raya Eve just to do this.... unique desserts.

Petites Fours

For the past 2 weeks we practised on Petite Four cakes. Petites Fours-A French term used to describe a multitude of small daity confections and biscuits - no longer than one or two bites most commonly served with the coffee at the completion of dinner or lunch. The word Petite means little and Fours means oven in French. Carefully observe the importance of layering jam, marzipan as a lamination between the cake base and fondant. The proper procedure of melting the fondant and steps to achieving to consistency and gloss. For topper we used marzipan ornaments..... fruits, royal icing... it up to your creativity.
For the base we used heavy Genoese, the texture is lesser crumbs compared to butter cake and the method of whipping the eggs and sugar is slightly different, at the intial stage we manually eat the egg on a double boil which is also known as Sabayong.

You can also decorated it with chocolate decor designs.

Its almost endless making the pineapple tarts to accomodate the orders. Each piece is carefully weigh and shaped and trims at the edges.... the traditional way of making tarts with generous amount of fillings..... oh no molds please......

Hari Raya project 1

Despite the sad news today - the passing of my cousin, I stole the extra time to fulfill my what I wanted to cover this weekend. Even though there are ready made pineapple tart fillings in the market, I choose to do it the traditional way, just like my mum did since 50 yrs ago. So as usual this festive, I will open my mum's 50 yrs recipe book to do the traditional tarts, daliah, marble cakes, caramel cakes, wajik, dodol,,,,, etc.

Thanks to mum my mentor, who never stop encouraging to bake.......... I once heard people said the best way to sing is just simple singing, and I guess when you apply it to baking the best way to bake is from your heart.

Fruit Flan Cake

Its the end of August 08, and Ramadhan is approaching. To all Muslim friends.... "Selamat Berpuasa!!"

So for this week we covered on Fruit Flan. The base for this cake is made of Sweet pastry and the cake is sliced into 2 and spread with custard and finished with fruit decoration. The technique of arrrange and slicing mango should be thin andproportion, looks easy but need lots of practise....!!

Another Teacher's Day.... my friends said... we did this to kill the time. So I guess what a better way to dedicated it on Teacher's Day.

Mango Mousse Cake

Yet another marathon week for me, the week ended on a happy note with Mango Mouse Cake. Desserts anyone?



Made of sponge based mixture, mousse cream based custard flavoured mango puree and decorated by finger biscuits as collar for the mousse. As topping, I used grapes and strawberry and designed chocolate decor effects. Another mouth watering dessert for a hot day!!

Lapis Strawberry Ice Cream Cake

Lapis Strawberry Ice Cream is made of both Strawberry and Vanilla Ice cream powder and real ice cream. Yes! you can bake ice cream.... The cake is done by grilling each layer by 2 layered of Vanilla followed by 2 Strawberry flavour and repeating the process until the last batter showing the layering effects.



One of the most 'delicate cake making' has to the family of Lapis Cake (traditional Asian Layered cake). The cake appearance and taste should be moist, technique of layering consistent, grilling each layer and finally the taste of fusion in it. When Rubiah had requested for this class-Lapis Strawberry Ice cream cake, I was thinking to myself... wow not an easy cake. So I had to carefully planned that it's fully hands-on class so that I can evaluate it immediately and give the fullest technique of baking it.


Three student joined me this week, Rubiah, Siti and Ain. Girls.... there more rooms for improvement, always practise and keep up the good work!!

Opera Cake Workshop


Two new students this week, Beth and Han together with Ain, Nadiana (now I get your rite!) and Kak Siti joined my Opera Cake workshop last Saturday. We started at 9am and ended at 3pm. Beth had requested for this class and others quickly snapped up the seats in a quest to know more about Opera Cake making. I guess slicing the cake would be the challenging part for most students but then again practise makes perfect. Thanks to all students for participating and making it a memorable day for me as a trainer.

The finish product by 2 students. Europeans call it L' Opera cake but the common Opera cake is made by 3 layer of Joconde (Almond Sponge Cake) sandwiched with Italian Buttercream and
coffee Syrup Ganache Topping and the word Opera written on it. Thanks to Chef Larry its always been my personal favourite too!!

Cake Decorating Class

Suhaila, a secondary school teacher from Hougang is my guest student this week. Hmmm.... teacher mets instructor.... oops no dont worry no conflicts. She choose the package cake decor class Cupcakes & Novelty cake. A soft spoken young lady, Suhaila is very keen to explore the world of cake decorating. I am glad that she chooses my class as part of the new embarkment into baking.
Suhaila reminds me of my early days in baking..... well she made the right move to start early.

Practical Exams 1

I waited in anticipation this week for the practical exam day to come. Well, baking is a joy for me but when comes to exams and completing it in 4 hours, well it can be nerve wracking too!

Cake Decorating Class

This week, I received 2 guest students, Hasnah and Ros. All the way from Pasir Ris and Tampines. Hasnah has asked if I could teach barbie doll cake decor, so I thought why not we do all 4 products, barbie doll, basketweave & edible image cake. Both has basic cake decor fundamental so it was easy and they are very creative too! Class started at 10.30am and ended almost 5pm and it went smoothly and the girls were in high spirit we had fun and they were proud to bring their products home.

When Hasnah email me the photo a car Porche.... I cannot image how to design the cake for her. Couldnt use flower motive cos it's a 21yrs nephews birthday. So we discuss and since it is mostly grey colour, why not try something different rather than the normal pink, blue colour

Baking Supplies Shopping Tour In Surabaya

When I first read about the famous 'Toko 8' in Surabaya, Indonesia.... I have always wondered how unique is this shop and I told myself that I will make a trip there someday. Seeing is believing, so finally, it came true on 9 Aug 08. Leaving my adorable kids and darling husband behind, I took an "adventure" tour to Surabaya which I choose to call it "Tour de Loyang", 'loyang' means mould in Malay/Indonesia.

The flight to Surabaya took 1hr 50mins....My kids sending me to the airport..... well who would ever guess how many moulds I brought back to Singapore....

I was welcome by the friendly tour guide named Abu Bakar from BMW Tours.... a very knowledgable guide....wow felt like a rich lady.... I was driven around in a MPV car by Benny and they waited for me each time I shop. After I finished, they would quickly rush to grab the shopping items. Well I guess you worked so hard in life..... so this is the time to enjoy. This is one of the famous monument in Surabaya city.... the tour guide told me that 'Sura' means shark and 'baya' mean crocodile.


Ever seen a square chiffon mould?I felt drown in flood of moulds.... lucky me the shop assistant followed around to push the trolley and helped me choosing the moulds.

This is Bu Eni, Pak Boy's wife the shop owner. She is not only generous with her smile, ensuring that I get the first class service from her staff. I spent 1/2 hr discussing. with Pak Boy... perhaps a win-win business relations in the near future.

Well overall its a great tour..... in my opinion if you want to do a "crazy shopping spree" like I did, deadly shopping... best if you bring a family member, especially husbands.... who will give you 100% assistance. On that note.... husband is always the best companions after all.
